I love to bake, and I knew I had to make something great for Easter. I always make a carrot cake because it just seems appropriate for the holiday. But making the cream cheese frosting makes me crave cheesecake, and by that time I’m too lazy to bake yet another dessert. So this time, I combined two recipes I love to use to make the ultimate carrot cake cheese cake with cream cheese frosting. I honestly didn’t think carrot cake or cheesecake could get any better (massive drool) I use the carrot cake recipe from RealLifeDinner and it is awesome every time!! For the middle layer, I used the cheesecake layer recipe from KitchenFunWithMy3Sons. It was my first time making it and I always get nervous using new recipes because the worst thing in the world is when it doesn’t turn out the way you imagined it would. But that wasn’t the case for this one-so smooth and creamy. It paired perfectly with the moist carrot cake layers. And for the frosting, I used a basic cream cheese frosting recipe I’ve made up in my head by trying and tweaking many different recipes I’ve come across over the years, which I will share with you below!
I like to set everything out before I start measuring so I don’t end up running back and forth between my cupboards and counters.
